These days I am following a healthy lifestyle which includes quite a lot of physical exercises like running, crossfit, weight training, cardio and yoga. It helped me increase my stamina and also shed some weight, of which I am extremely happy about. But as per experts, fitness is 30% exercise and 70% diet, which make it exceptionally significant to analyze what we eat? And how nourishing it is? More than gym, kitchen plays a crucial role in maintaining our fitness, strength and endurance. So keeping in mind all this, I will share one of my recipes in today’s blog, which will not only add flavors to your regime but sufficient nutrients and energy. And yes!! You wont be guilty of eating wrong and unhealthy.
The recipe is “Baked Bell Peppers stuffed with mixture of Light Grinded Sprouts, Mushrooms, Spinach and Mint, garnished with roasted pumpkin & sesame seeds and zuchinni”
Green gram and black chickpeas (soaked and sprouted, 1 large bowl)
Plain Oats (roasted and grinder, around half a cup)
7-8 mushrooms chopped
1 small bowl of washed and chopped spinach
Garlic (2-3 slices)
Ginger (2-3 slices)
3-4 green chilli
Salt (as per taste)
Roasted Cumin Powder
Garam Masala powder
Lemon Juice (2 teaspoon)
So to begin with, first of all take bell peppers, wash them thoroughly and cut open from top. Be careful that you cut open just a thin slice and not the major part of vegetable. Next, scoop out all of its seeds and attached membranes, so that it is hollow and ready to be stuffed. Keep them aside, till we prepare the stuffing.
To prepare stuffing, first of all we need sprouted green gram (also known as Moong) and black chickpeas (kala chana). Wash these sprouts thoroughly and let them dry for some time. Next put them in grinder and grind very lightly. We need a coarse mixture of both, not very fine. Remember it should be dry and not wet. Now, take a saucepan and pour around 1 spoon of olive oil in it (olive oil is good for health, but you can use any other oil if you want). As the oil becomes hot, put finely chopped garlic, ginger and green chillies. Let them become golden brown, and once they are done add chopped mushrooms and spinach (Here, remember to keep aside some chopped mushrooms for later use). Cook them on low flame, covered, till mushrooms get soft and spinach wilts. After some time remove the lid and now cook them open so that the water from mushroom and spinach evaporates. During this process add some chopped mint leaves and coriander leaves. Cook the mixture till it becomes dry. Once done, add in it those grinded sprouts and roasted oats flour. Mix everything, cook for 2-3 minutes and now add salt, red chilli powder, coriander powder, lime juice, oregano, pinch of garam masala and cumin powder. Mix everything nicely. Switch off the flame and cool down the mixture. Stuffing is ready.
Take those hollow bell peppers and spread a layer of raw and chopped mushrooms at the bottom.
Now start stuffing peppers with the above prepared stuffing. Don’t overfill and make sure you have little amount of space left at the top. Fill all bell peppers and now with the help of brush apply some olive oil on the outer surface of bell peppers. They are now ready to be baked.
Pre heat your oven at 180 degree C for around 7-8 minutes. Then line a glass tray with aluminium foil and apply some oil on it with the help of brush. Next place your bell peppers on foil in upright position in the tray. Once the oven is ready, place the tray inside and bake bell peppers for around 15-20 minutes. Remove the tray from oven and check for the texture of bell peppers. If they appears soft enough and bit golden brown from top, they are ready to be served, else, place them in oven for few more minutes.
Take out bell peppers from the tray and garnish them with Zucchini slices, Roasted Pumpkin and Sesame seeds.
And your delicious breakfast is ready to be served!! Perfectly healthy and tasty, these stuffed and baked bell peppers will be loved by everyone and will surely turn you into a celebrity chef. And not to mention, they are wholesome and nutritious for yourself as well.
